Winemaking: Totally natural - wild yeast, no fining, filtration, or sulfur. This È Bianco spends its lift in stainless steel and bottle, preserving that bright, floral aromatic quality.

Fausto Cellario, like his wines, has nothing to hide. His personality is exuberant and thoughtful, and along with his family he’s been running an excellent natural winery in Piedmont, highlighting native grapes and helping discover lost ones.

White flowers, fresh and dry,” says Fausto, drinking this wine in the middle of its vineyard. Megan and I thought the same thing when we tasted this. It’s floral without being sappy, and finishes so pleasantly dry. This is what we mean when we talk about a sessionable wine. You can have a couple glasses of this without feeling heavy. Pour away!

Pasta with Peas, Prosciutto + Fontina

A buttery, rich, pasta-centric spin on the classic central-southern Italian dish Saltimbocca (which literally means to “jump in your mouth”) this pasta is succulent and over-the-top. I’m a huge fan and I think you will be too. The floral notes and dry palate of the È Bianco from Poderi Cellario provides a nice backdrop for all the rich flavors of this dish.
