Grapes: 75% Sangiovese, 15% Canaiolo, 10% Cabernet Sauvignon

Winemaking: Fermentation with wild yeast in concrete vessels, 18-24 months aging in neutral French oak tonneaux

Bacchereto is a winery with a long history–this region was demarcated for wine production in 1716, and the Tesi family has been in possession of the estate since the 1920s. Carmignano is one of the first places in Italy to grow Cabernet Sauvignon grapes as a blending partner for Sangiovese, to add heft.

Two things I love about this wine: one, it’s full of rich, spicy red fruit, but it also tastes rustic and tangy like a proper Italian red should–Notes of toasted fennel and salumi complement cranberry and dusty earth. It’s meant to go with Tuscan country cuisine. Think thick pici pasta with ragù al Cinghiale (wild boar) and you’re on the right track.
