“I hate everything about wine”

is a phrase that once escaped the lips of Peter Gönc. It was his grandpa’s business, his dad’s business, and he wanted nothing to do with it. It was only after leaving home and trying out some other careers that he realized how good he’d had it growing up around a winery.

Fast forward a few years and Peter has taken the helm at the Gönc winery, honing his skills and his creativity along the way. He is inspired by rock music, both classic and new, and often names his wines after invidual songs, scratching them in chalk onto the barrel heads. This wine in particular is named “Canvas,” not after a song but instead in homage to his father, who created a canvas for Peter to create exciting wines on.

This wine was an easy add for the box. I wanted something brisk, bubbly and bright for when the weather warms up, as it’s doing so nicely here in Seattle as I write this. This wine is made from 100% Pinot Noir grapes, but it’s not about varietal character in this wine. It’s just about sheer enjoyment, refreshment, and happiness.

On the nose there’s loads bright red cranberry and raspberry fruit. On the palate, very lively bubbles splash forth, with an aroma of wildflower petals, and flavors of strawberries and cream. This is a wine to enjoy in the sunshine, as a precursor to dinner, or for a nice picnic lunch with lots of salty snacks.

The extremely talented and artistic chef Ashley Rodriguez has worked with us to select some of her recipes to go with each wine in the May box. If you haven’t checked her recipes and cooking out, you’re missing out. If you’re getting a box this month, there’s a recipe booklet from Ashley and at least one recipe for each wine, so check it out!

Fried Chicken Sandwiches on Black Pepper biscuits

why? because sparkling wine and fried chicken is a match made in heaven.

Lemon Pepper Popcorn

simple but an absolute firecracker with a bubbly wine like this. Check this recipe.

What this wine needs is a low-pressure, laid back song. I really want you to wait for a sunny day to enjoy this wine, because sometimes a wine can be enhanced by the environment you’re in. And pairing some chill tracks even boosts it up more.
