Region: Cebreros-Sierra de Gredos, Madrid, Spain

Winemaker: Telmo Rodriguez

Viniculture: 60-year-old, organically-farmed, bush-trained Garnacha vines

Winemaking: After a manual harvest, the wine is fermented with native yeasts in large, used open-top 5000L foudres and then aged six months in 500L French oak barrels of various origins and ages. It then spends a further six months in stainless steel tanks before it is fined traditionally with egg whites and bottled unfiltered.

Telmo Rodriguez is one of the modern wizards of the Spanish wine scene. He recuperates vineyards all over Spain and has rescued grapes from extinction. Pegaso, a project in the barren and hot Sierra de Gredos mountains outside of Madrid, is his love letter to the Garnacha grape.

This wine comes from vineyards of 60 or more years of age, grown in barren, rocky volcanic soil. The vines are planted like tiny, gnarled bushes and yield very little fruit, but the grapes that do grow have immense concentration. That explains the rich and powerful tannin of this grippy little wine, as well as the abundant baked strawberry and dried orange peel notes present here, as well as pine tar and fresh herbs.
