“dry, fruity and savory”

Lyrarakis is one of my favorite wineries in the world. They’re based on the island of Crete and are always making incredible cuvées, with creativity, sustainability and obligation to their land and people as their inspiration. They’ve certainly supplied some head-scratching, paradigm-shifting wines for me. Their rosé, which was featured in our 4th release, is amazing, as is their Daphne white, made from a resurrected grape

This is a white blend that showcases the power of volcanic island soil to endow wines with texture, richness and weight. Because it’s grown near the ocean, it also has a wonderful salty bright quality. Notes of fresh lemon peel, green olive oil and sea spray come out of the glass, and the finish on the palate is dry, fruity and savory. It’s a wine for herbal seafood dishes bar-none. Oysters Rockefeller, anyone?

Lemon Herb Baked Halibut from the Spruce Eats

Crisp, textured, salty white loves a rich seafood dish that’s not too heavy. Halibut will do nicely.
